Whether you take a seat in its delightful summer garden or beautiful minimalist-style dining room, the Japanese restaurant at the extremely modern Lone hotel provides an interesting blend of Istrian and Japanese cuisine. The techniques and recipes are Japanese, while the ingredients and personalised reinterpretations are from the region. We particularly enjoyed the duck breast with chicory, which was cooked to perfection with crispy skin and accompanied by a creamy umeboshi plum and pomegranate sauce – the perfect balance of sweet and savoury flavours.
