Housed within a small boutique hotel on the edge of the Old Town is this elegant restaurant where the old and the new combine: part of the Medieval city wall runs down one side of the room, yet it also has a contemporary, design-led style. Âme is French for ‘soul’ and, while the appealingly understated dishes certainly have a French heart, flavours are also drawn from around the globe and, as such, are described as ‘dishes that feed the soul’. Opt for one of the two tasting menus to sample a range of these dishes, such as goose breast à l'orange or roasted cauliflower à la Marrakech.
