It was clear that Gofio’s cuisine needed a change of scenery and a larger space in which to give full rein to the cuisine of the Canary Islands and at first glance it seems to have worked! The new premises, located in a street parallel to the ever-busy and bustling Gran Vía, is laid out on two floors with a private space at street level and the main dining room in the basement, in the style of a modern bistro with an open kitchen. The Tenerife-born chef at the helm, Safe Cruz, showcases the traditional flavours of the islands from a creative perspective on three tasting menus (Gofio Express, Canariedad Máxima and Canariedad Máxima Plus) that successfully convey the essence of this volcanic archipelago through an array of small bites. These include the “salpicón” of red tuna with a coriander mojo and “causa” with Palmera pepper; white prawns with a prawn head mojo and cardamom mojo; and baked red mullet with a jus made from its bones and chive oil, all of which are meticulously prepared and are full of flavour.
